The local presence of viticulture in the area dates back to Etruscan times, as testified by many archaeological finds from that period.<br \/>\nThe production and sale of wine has been the main agricultural and economic activity in the San Gimignano area for centuries and, in actual fact, the production of red wine has always been higher than that of white wine, the more famous Vernaccia di San Gimignano.<br \/>\nBetween the end of the Middle Ages and the beginning of the Renaissance, the vineyards of San Gimignano produced both white wine and a \u201cvermilion\u201d wine, a full-bodied and highly esteemed red wine.<\/span><\/p>\n<\/div><\/div><\/div><\/div><\/div><\/div><\/div><\/section><section class=\"l-section wpb_row us_custom_bcf61fd9 f_height us_animate_this height_huge\"><div class=\"l-section-overlay\" style=\"background:rgba(0,0,0,0.45)\"><\/div><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row via_flex valign_middle type_default stacking_default\"><div class=\"vc_col-sm-6 wpb_column vc_column_container\"><div class=\"vc_column-inner us_custom_744382d1 us_animate_this\"><div class=\"wpb_wrapper\"><h2 class=\"w-text us_custom_a4033cd6 has_text_color\"><span class=\"w-text-h\"><span class=\"w-text-value\">Vin Santo<\/span><\/span><\/h2><div class=\"wpb_text_column us_custom_fdb57758 has_text_color\"><div class=\"wpb_wrapper\"><p><span style=\"font-weight: 400;\">The city of towers is also famous for its Vin Santo, a wine with a long tradition: the earliest records date back to 1348, when a Franciscan monk tried to soothe the agonies of the plague victims with a sweet wine. It was at this time that the local sweet wine took the name Vin Santo (holy wine).<br \/>\nIn addition to its therapeutic use, Vinsanto was for centuries the wine that farming families used to welcome visitors, with guests being given a \u201cbicchierino\u201d (a little glass) of Vinsanto, which was produced in \u201cvinsantaie\u201d (Vinsanto lofts), in small casks known as \u201ccaratelli\u201d. Every family had its own recipe, expedients and procedures that were handed down from father to son.<\/span><\/p>\n<\/div><\/div><\/div><\/div><\/div><div class=\"vc_col-sm-6 wpb_column vc_column_container\"><div class=\"vc_column-inner\"><div class=\"wpb_wrapper\"><\/div><\/div><\/div><\/div><\/div><\/section><section class=\"l-section wpb_row us_custom_a518f36e f_height us_animate_this height_medium\"><div class=\"l-section-h i-cf\"><div class=\"g-cols vc_row via_flex valign_top type_default stacking_default\"><div class=\"vc_col-sm-6 wpb_column vc_column_container img_txt has_bg_color\"><div class=\"vc_column-inner us_custom_4b37b2b3\"><div class=\"wpb_wrapper\"><\/div><\/div><\/div><div class=\"vc_col-sm-6 wpb_column vc_column_container\"><div class=\"vc_column-inner us_custom_cf3723f6 us_animate_this\"><div class=\"wpb_wrapper\"><h2 class=\"w-text us_custom_d817e070\"><span class=\"w-text-h\"><span class=\"w-text-value\">San Gimignano today<\/span><\/span><\/h2><div class=\"wpb_text_column us_custom_66a2ea1c\"><div class=\"wpb_wrapper\"><p><span style=\"font-weight: 400;\">In the mid-1990s, by virtue of the area&#8217;s unquestionable vocation for the production of red wines and Vinsanto, and after years of research and observation both in the field and in the local cellars, the Consortium decided, with the support of all its members, to standardise the historical production of San Gimignano&#8217;s red wines and Vinsanto.<br \/>\nIn 1996, the DOC \u201cSan Gimignano\u201d Rosso, Sangiovese, Rosato and Vin Santo was created.<br \/>\nAt that time, the San Gimignano winegrowing community, strengthened by its age-old history of local vine-growing and winemaking, but equally aware of the importance of innovation in both viticulture and oenology, planted small plots of international grapes such as Merlot, Cabernet Sauvignon, Syrah and Pinot Noir in addition to Sangiovese, the principal grape variety used in the production of Tuscany&#8217;s red wines.
